NOTE: To make this a Whole30 recipe, substitute EVOO, refined coconut oil, or ghee for the butter.
Citrus Baked Salmon Recipe
Ingredients
- 3 (5 oz) salmon filets
- 2 Tbsp fresh lemon juice
- 2 Tbsp fresh lime juice
- 2 Tbsp fresh orange juice
- 1/2 tsp butter, melted
- 1/2 tsp dried parsley
- 1/4 tsp ground paprika
- 1/8 tsp freshly ground sea salt
- 1/8 tsp freshly ground black pepper
- Extra virgin olive oil (EVOO) spray
Directions
- Preheat oven to 350◦ F.
- Spray an 8″ x 8″ baking dish lightly with EVOO.
- Place salmon filets in baking dish.
- In a small bowl, mix together 2 Tbsp lemon juice, 2 Tbsp orange juice, and 2 tbsp lime juice, 1/2 tsp melted butter, 1/2 tsp parsley, 1/4 tsp paprika, 1/8 tsp salt, and 1/8 tsp black pepper until well blended.
- Drizzle juice mixture over salmon.
- Bake 10 – 15 mins, until fish easily flakes with a fork.
- When done cooking, insert a meat thermometer into the thickest center of a filet to obtain a reading of at least 145◦ F.
