Shortly after our newly remodeled kitchen was finished, I was still sick and hadn’t been cooking but HAD been seriously craving comfort junk food. Originally planned to have this recipe use up some leftover coconut flakes, but ended up skipping out on the coconut in this version.
Certainly the best crispy rice treats I’ve EVER had. So delicious!!!
NOTE: I use a silicon spatula for all mixing and pressing in this recipe… These will get *rock-hard* if you refrigerate, so I recommend only making as much as you plan to eat over the course of a few days.
TIPS: Go old-skool w/ original Rice Krispies or similar cereal of choice. Tho, I once tried w/ Fruity Pebbles and they tasted like chemicals – so I recommend passing on that particular cereal… Maybe, instead, get crafty with fruity marshmallows (either wholly or using regular for the melt and fruity for the 2 cups add-in.
To make my Coconut Krispie Fluff Bars, sub out the Cocoa Krispies for Rice Krispies and add 1 1/2 cups sweetened flaked coconut in Step 5:
Cocoa Krispie Fluff Bars Recipe
Ingredients
- 10 cups mini marshmallows, divided (assume 6 cups per 10 oz bag)
- 6 cups Cocoa Krispies®
- 6 Tbsp unsalted butter
Directions
- Line a 9″ x 13″ baking dish with parchment paper, then set aside.
- Melt 6 Tbsp butter in a large stockpot over medium heat on stovetop.
- Add 8 cups marshmallows, stirring continually until they melt.
- Remove from heat and slowly add 6 cups cereal, continually stirring until combined.
- Stir in the remaining 2 cups marshmallows until well distributed.
- Scoop mixture into the baking dish and press the mixture so that it spreads as evenly as possible across the expanse of the dish (including into corners – see bottom, right pic above).
- Let cool for about 5 mins before slicing.
- Store in an airtight container.
