Corned Beef Brisket Platter Recipe

  1. Place 2 1/2 lbs brisket, centered, at bottom of inner pot of Instant Pot (IP).
  2. Pour 1 cup water over brisket.
  3. Pour seasoning packet (from brisket package) over brisket.
  4. Close lid, set to SEAL, and select PRESSURE COOK (or MANUAL) for 60 mins.
  5. When cooking cycle completes, allow a natural release (NR) for 10 mins, then do a quick release (QR) and remove the lid.
  6. Transfer cooked brisket to a large cutting board and set aside to rest.
  7. Add to IP’s inner pot: 1 1/2 lbs halved mini gold potatoes, pieces of 1 bunch of carrots, and 8 wedges from 1 head of cabbage.
  8. Close lid, set to SEAL, and select PRESSURE COOK (or MANUAL) for 7 mins.
  9. When cooking cycle completes, do a quick release (QR) then remove the lid (always away from you).
  10. Carve brisket, against the grain, into thin slices.
  11. In a small bowl, whisk together 4 Tbsp melted butter and 1 tsp ground black pepper.
  12. Transfer brisket to center of a serving platter. Place veggies in a circle surrounding the brisket.
  13. Drizzle butter mixture over veggies.
