Corned Beef Brisket Platter Recipe
Ingredients
- 2 1/2 lbs boneless corned beef brisket with seasoning packet
- 1 bunch of carrots (about 7 small- to medium-sized carrots), cut into 1-inch pieces
- 1 1/2 lbs mini gold potatoes, cut into halves
- 1 head of green cabbage, cut into 8 wedges
- 1 cup water
- 4 Tbsp butter, melted
- 1 tsp freshly ground black pepper
Instructions
- Place 2 1/2 lbs brisket, centered, at bottom of inner pot of Instant Pot (IP).
- Pour 1 cup water over brisket.
- Pour seasoning packet (from brisket package) over brisket.
- Seal lid and select PRESSURE COOK (or MANUAL) for 66 mins.
- When cooking cycle completes, do a quick release and remove the lid.
- Transfer cooked brisket to a large cutting board and set aside to rest.
- Add to IP’s inner pot: 1 1/2 lbs halved potatoes, pieces of 1 bunch of carrots, and 8 wedges from 1 head of cabbage.
- Seal lid and select PRESSURE COOK (or MANUAL) for 7 mins.
- When cooking cycle completes, do a quick release then remove the lid (always away from you).
- Carve brisket, against the grain, into thin slices.
- In a small bowl, whisk together 4 Tbsp melted butter and 1 tsp black pepper.
- Transfer brisket to center of a serving platter. Place veggies in a circle surrounding the brisket.
- Drizzle butter mixture over veggies.
