

My boys love alfredo so I made this version lower in saturated fat. Made with my favorite Alfredo ingredient: crushed red pepper flakes.
Cottage Alfredo Recipe

Ingredients
- 8 oz uncooked fettuccine
- 1 1/4 cup lowfat cottage cheese
- 1 cup nonfat milk
- 3 oz baby spinach
- 1 oz shredded Parmesan cheese
- 3 Tbsp unsalted butter, softened
- 1 Tbsp all-purpose flour
- 1 Tbsp extra virgin olive oil (EVOO)
- 2 tsp chopped garlic
- 1 tsp kosher salt
- 1/4 tsp crushed red pepper
Directions
- Fill a large stock pot about halfway full then bring to a boil on stovetop.
- Add 8 oz fettuccine and cook, stirring occasionally, until almost at your desired level of doneness – I cooked mine the max time listed on the pasta box (11 mins).
- Add to food processor: 1 1/4 cup lowfat cottage cheese, 1 cup nonfat milk, 1 oz shredded Parmesan cheese, 3 Tbsp softened unsalted butter, 1 Tbsp all-purpose flour, 2 tsp chopped garlic, and 1 tsp kosher salt.
- Pulse until smooth then transfer to a large skillet.
- Bring to a simmer over medium heat on stovetop and cook, stirring frequently, until sauce is thickening (reducing), 8 to 10 minutes.
- Add 1/4 tsp crushed red pepper and 3 oz baby spinach and stir in until spinach wilts then turn heat down to a simmer.
- Before draining fettuccine, set aside 1/2 cup of the pasta water.
- Drain fettuccine then return it to the stock pot.
- Add 1 Tbsp EVOO and toss to coat.
- Add fettuccine to skillet and toss to coat.
- Add reserved 1/2 cup pasta water and toss fettuccine to coat then continue cooking until sauce has reached your desired thickness.
