

John isn’t typically a fan of quiche, but he really liked this one.
This is definitely on the denser, rather than fluffier, side of quiches due to the cottage cheese, but oh so wonderful as is!
Cottage Crustless Quiche Lorraine Recipe

Ingredients
- 4 large eggs
- 1/2 cup nonfat milk
- 1/4 tsp ground nutmeg
- 1/4 tsp ground black pepper
- 1 cup low fat cottage cheese
- 4 slices bacon, cooked and crumbled
- 1/2 cup shredded Gruyère cheese
- 1/4 cup grated Parmesan cheese
- extra virgin olive oil (EVOO) spray
Directions
- Preheat the oven to 375° F.
- Spray a 9” round pie dish with EVOO spray.
- In a medium mixing bowl, whisk together 4 large eggs, 1/2 cup nonfat milk, 1/4 teaspoon ground nutmeg, and 1/4 tsp ground black pepper.
- Stir in 1 cup low fat cottage cheese, bacon bits from 4 slices of bacon, 1/2 cup shredded Gruyère cheese, and 1/4 cup grated Parmesan cheese until well-combined.
- Pour batter into prepared pie dish.
- Bake 35 mins, until quiche is set and golden brown on top.
- Allow to cool just 5 mins before serving.
