Made dinner just for myself tonite as my husband won’t eat quinoa nor chickpeas.

Ah-mazing!!!

I literally ate half of it in 1 sitting (the equivalent of 2 servings, when I almost never grab seconds these days)! 😋

Creamy Italian Quinoa Stew Recipe

Ingredients
  • 2 Tbsp extra virgin olive oil (EVOO)
  • 1 cup diced yellow onion (about 1/2 medium onion)
  • 3 medium carrots, scrubbed and diced
  • 2 stalks celery, diced
  • 4 tsp minced garlic
  • 1/2 tsp ground black pepper
  • 1 (15 oz) can chickpeas, drained & rinsed
  • 1 (14.5 oz) can diced tomatoes (DON’T DRAIN)
  • 1 1/4 cup uncooked quinoa, rinsed & drained
  • 1 (8 oz) can tomato sauce
  • 1 Tbsp Nearly Italian Seasoning
  • 4 cups vegetable stock
  • 1 1/2 cups heavy whipping cream
  • 50 g fresh baby spinach, trimmed & chopped (most of a 5.25 oz bag)
Directions
  1. Heat a large skillet over medium-high heat on stovetop.
  2. Add 2 Tbsp EVOO and heat.
  3. Add 1 cup diced yellow onion, diced 3 medium carrots, and diced 2 stalks celery and sauté 5 mins.
  4. Add 4 tsp minced garlic and 1/2 tsp ground black pepper and sauté 30 secs.
  5. Add drained & rinsed 15 oz can chickpeas, 14.5 oz can diced tomatoes, rinsed & drained 1 1/4 cup uncooked quinoa, 8 oz can tomato sauce, 1 Tbsp Nearly Italian Seasoning, and 4 cups vegetable stock then stir to combine.
  6. Bring to a boil, then reduce heat to lowest setting and simmer, partially covered, for up to 20 mins. Keep an eye on it as you don’t want all of the liquid to cook off!
  7. Stir in 1 1/2 cups heavy whipping cream.
  8. Stir in trimmed & chopped 50 g fresh baby spinach, until just wilted.
