Dauphinoise Potatoes

My initial attempt at making this recipe for Easter Lunch 2023 sent me to the ER with a missing thumb tip… When slicing your potatoes, use the safety stuff that comes w/ your mandoline boys and girls!!!

When we finally got around to finishing our Easter lunch that became dinner that day, I was actually hard-pressed to choose my favorite b/w this and another newly crafted recipe: Holiday Green Beans!

TIPS: True Dauphinoise Potatoes are made w/ Gruyère, not sharp cheddar, AND potatoes are peeled, but to each their own.

Ingredients
  • 2 medium Russet potatoes (about 2 lbs), washed well but not peeled
  • 2 1/2 cups freshly grated sharp cheddar cheese
  • 1 1/2 cups heavy whipping cream
  • 2 Tbsp unsalted butter, melted
  • 2 rounded tsp minced garlic
  • 1 tsp freshly ground sea salt
  • 2/3 tsp dried thyme
  • 1/4 tsp freshly ground black pepper
Directions
  1. Preheat oven to 350° F.
  2. In a medium bowl, mix together 2 Tbsp melted butter, 1 1/2 cups cream, and 2 rounded tsp garlic until well combined, then set aside.
  3. Slice 2 potatoes 1/8″ thick. SEE MANDOLINE NOTE ABOVE!
  4. Layer 1/3 of the potato slices in a 9″ x 13″ baking dish.
  5. Pour 1/3 of the cream mixture over the potato slices.
  6. In a ramekin, combine 1 tsp salt, 1/4 tsp black pepper, and 2/3 tsp thyme.
  7. Scatter 1/3 of the seasoning mixture over the cream mixture in the baking dish.
  8. Sprinkle with 3/4 cups grated cheddar cheese.
  9. Repeat Steps 4-8 one time, then repeat Steps 4-7 another time (but don’t do Step 8 for this 3rd layer!).
  10. Cover with foil and bake for 75 mins, until the potatoes in the middle are fork-soft.
  11. Remove foil, sprinkle remaining 1 cup cheddar cheese on top, then bake for another 15 mins, until cheese is melted and casserole is bubbling.
  12. Allow to set for 5 mins before serving.
