I’m not typically a fan of friend chicken so these baked tenders really work for me!

Down Home Chicken Tenders Recipe

Ingredients
  • 1 1/4 lbs boneless, skinless chicken tenders
  • 4 cups corn flakes
  • 2 eggs
  • 1/2 cup 2% milk
  • 1/4 cup honey
  • 1 Tbsp fresh parsley, chopped
  • 1 tsp paprika
  • 1/2 tsp pink Himalayan salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp onion powder
  • extra virgin olive oil (EVOO) spray
Directions
  1. Preheat oven to 425 F.
  2. Cover a baking pan with foil and spray lightly with EVOO.
  3. In a small bowl, beat 2 eggs.
  4. Add 1/2 cup 2% milk and whisk to combine.
  5. Pour milk mixture onto a shallow plate and set aside.
  6. In a gallon size Ziplock bag, add 4 cups corn flakes, then seal and *pound* until coarse crumbs form then set aside. I use my French rolling pin to apply rolling pressure to crumble ingredients together.
  7. In a small ramekin, mix together 1 tsp paprika, 1/2 tsp salt, 1/4 tsp black pepper, and 1/4 tsp onion powder.
  8. Add 1 tsp spice mixture to corn flake crumbs bag and toss together.
  9. Pour crumb mixture onto a shallow plate.
  10. Season 1 1/4 lbs chicken tenders with remaining 1 tsp spice mixture.
  11. Dip each tender into the milk mixture, then allow excess to quickly drip off.
  12. Roll each tender in crumb mixture until well-coated.
  13. Place each coated tender on baking pan, spaced evenly, in a single layer.
  14. Spray tenders moderately with EVOO.
  15. Bake 15 mins, until chicken is 165 F.
  16. Sprinkle tenders evenly with 1 Tbsp parsley then plate.
  17. Drizzle 1/4 cup honey evenly over tenders then serve.
