Down South Coleslaw

I’m a big fan of Raising Cane’s coleslaw. Really the primary reason I’ll agree to eat there when my boys want it. This is my copycat version of it. So good!

I typically make this to serve IN my sandwiches piled with Pulled Pork on a toasted Basic Chaffle. But, it’s also just great as a side, which is how hubby eats it.

You can use mayo instead of vegan spread, I’m just not a huge fan of mayo…

Down South Coleslaw Recipe

Ingredients
  • 1 (14 oz) bag Coleslaw Mix
  • 1/2 cup mayonnaise
  • 1/3 cup granulated sugar
  • 1/4 cup buttermilk
  • 2 Tbsp lemon juice
  • 1 Tbsp distilled white vinegar
  • 1/2 tsp Himalayan pink salt
  • 1/8 tsp ground black pepper
Directions
  1. In a small bowl, whisk together 1/3 cup granulated sugar, 1/4 cup buttermilk, 2 Tbsp lemon juice, 1 Tbsp vinegar, 1/2 tsp salt, 1/8 tsp ground black pepper, and 1/2 cup mayonnaise until well combined.
  2. Place coleslaw mix in a large glass or ceramic bowl and pour the dressing mixture over it.
  3. Stir gently until well incorporated.
  4. Cover w/ plastic wrap and refrigerate for at least 3 hrs.
  5. When ready to serve, remove from fridge and stir thoroughly.
  6. Serve w/ tongs so that the bulk of the runniness of the dressing stays in the serving bowl.
