Enchilada Casserole

A deep dish Southwest bake, we make ours without corn 🌽 and go easy on the cumin. but you can sure add in/more if you want 🥵 .

All in all this is quite tasty. And – for me – the best part (because I really like it) is that I now have 2 in the fridge for lunches this week and 2 in the freezer for later lunches!!! 😋

Ingredients
  • 12 (5 1/2″) white corn tortillas
  • 1 lb 99% extra lean ground turkey
  • 2 (15 oz) cans low sodium black beans, drained (don’t rinse)
  • 20 oz red enchilada sauce (divided)
  • 2 cups reduced fat Mexican cheese (divided)
  • 10 oz diced tomatoes with green chiles (don’t drain!)
  • 1 cup shredded sharp Cheddar cheese (divided)
  • 2 Tbsp extra virgin olive oil (EVOO)
  • 1 Tbsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
Directions
  1. Preheat oven to 350° F.
  2. In a 9″ x 13″ baking dish, spread 10 oz red enchilada sauce to evenly coat the bottom of dish.
  3. Heat a large skillet over medium heat on stovetop
  4. Add 2 Tbsp EVOO and heat.
  5. Add 1 lb 99% extra lean ground turkey and cook, breaking turkey into smaller chunks as it cooks – then, turn off heat and drain any excess fat or water from skillet.
  6. Add 1 Tbsp chili powder, 1 tsp garlic powder, 1/2 tsp ground cumin, remaining 10 oz of red enchilada sauce, drained low sodium black beans, and diced tomatoes with green chilis – then, stir until well-combined.
  7. In baking dish, layer 6 white corn tortillas on top of the enchilada sauce.
  8. Spoon half of turkey mixture over tortillas,
  9. Sprinkle with 1 cup reduced fat Mexican cheese and 1/2 cup shredded sharp Cheddar cheese.
  10. Layer with remaining 6 white corn tortillas.
  11. Spoon remaining half of turkey mixture over tortillas.
  12. Sprinkle with remaining 1 cup reduced fat Mexican cheese and remaining 1/2 cup shredded sharp Cheddar cheese.
  13. Bake 30 mins – then allow to cool – 5-10 mins on stovetop before slicing and serving.
