This is another one that hubby says he could eat 3 or 4 days/week.
Filet Mignon in a Cabernet Sauvignon Reduction Recipe
Ingredients
- 1 1/2 lb filet mignon, thinly sliced
- 1/2 small yellow onion, finely minced
- 2 cups beef broth
- 1 cup dry red wine (I use Cabernet Sauvignon)
- 3 Tbsp butter, divided
- 1 Tbsp all-purpose flour
- 1 Tbsp extra virgin olive oil (EVOO)
- 2 rounded tsp chopped garlic
- 1/4 tsp dried thyme
- 1/8 tsp ground black pepper
Directions
- Season 1 1/2 lbs filet strips lightly with 1/8 tsp ground black pepper, then set aside.
- Heat a large skillet on stovetop, over medium heat.
- Add 2 Tbsp butter and melt.
- Add finely minced 1/2 small yellow onion and 1/4 tsp dried thyme and sauté until tender (about 4-5 mins).
- Add 2 rounded tsp chopped garlic and sauté for 30 secs.
- Slowly sprinkle in 1 Tbsp all-purpose flour, constantly stirring for about 1 min.
- Add 2 cups beef broth and 1 cup dry red wine (such as Cabernet Sauvignon) then bring to a boil.
- Reduce to medium-high heat, then simmer until reduced to about 1 cup, stirring occasionally.
- After the sauce has been simmering for about 5 mins, heat a large cast iron skillet over medium-high heat on stovetop.
- Add remaining 1 Tbsp butter and 1 Tbsp EVOO and heat.
- Working in batches, add 1 1/2 lb filet strips and sauté until brown on the outside but still pink in center, about 2-3 mins on the first side. Watch for juice to develop on the top side, then turn and continue to cook to desired temperature (anywhere from 30 secs up to 2 mins).
- Transfer filet strips to a plate and set aside. I keep mine in the microwave.
- Transfer reduced sauce to the cast iron skillet and heat for 1-2 mins over medium heat, constantly whisking.
- Whisk in juices from the resting filet strips.
- Arrange filet strips on individual plates, then spoon sauce over the top.
