Ingredients
  • 6 slices uncooked center-cut bacon
  • 110 g chopped yellow onion (about 1 medium after trimming)
  • 25 g minced jalapeño (about 1 medium after trimming and seeding)
  • 3 bay leaves
  • 30 g (2 Tbsp) minced garlic
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • 32 oz unsalted chicken stock (divided)
  • 1 lb dried pinto beans, rinsed & drained
  • 2 Tbsp coconut aminos
  • 28 oz fire-roasted crushed tomatoes (DON’T DRAIN!)
  • 4 g (1/4 cup) chopped cilantro leaves
Directions
  1. Lay 6 slices uncooked center-cut bacon – side-to-side (they can overlap a bit) – at bottom of Instant Pot’s (IP) inner pot.
  2. Select SAUTÉ – MORE and cook bacon, flipping about halfway through.
  3. Transfer cooked bacon slices to a paper towel-lined plate. Once drained of any excess fat, break bacon into bits.
  4. Add 110 g chopped yellow onion and 25 g minced jalapeño to IP’s inner pot, then sauté for 4 mins.
  5. Add 3 bay leaves, 2 Tbsp minced garlic, 1/2 tsp ground cumin, and 1/2 tsp dried oregano, then sauté for 1 min.
  6. Pour in 1/2 cup unsalted chicken stock, then deglaze (scrub off stuck on bits) the bottom of the pot with a wooden spoon/spatula.
  7. Add 1 lb rinsed and drained pinto beans, 3 1/2 cups unsalted chicken stock, half of the bacon bits, and 2 tbsp coconut aminos – then stir until well combined and all beans are submerged.
  8. Layer with undrained 28 oz fire-roasted crushed tomatoes. Resist the urge to stir!
  9. Close lid, set to SEAL, and select PRESSURE COOK (or MANUAL) for 45 mins.
  10. When cooking cycle completed, allow a 20-min natural release (NR), then do a quick release (QR), setting to VENT.
  11. Select CANCEL, remove lid (away from you), and remove bay leaves.
  12. Select SAUTÉ – NORMAL, stirring frequently (so they don’t burn on bottom) until beans reach your desired thickness.
  13. Transfer to bowls and sprinkle (evenly divided) with remaining half of bacon bits and 4 g (1/4 cup) chopped cilantro.
