Frijoles Charros Recipe
Ingredients
- 1 lb dried pinto beans, rinsed & drained
- 6 slices bacon
- 32 oz unsalted chicken stock
- 28 oz fire-roasted crushed tomatoes
- 3 bay leaves
- 1 onion, chopped
- 1 jalapeño, minced
- 1/4 cup cilantro, chopped
- 2 Tbsp chopped garlic
- 2 Tbsp coconut aminos
- 1/2 tsp ground cumin
- 1/2 tsp dried oregano
Directions
- Lay 6 slices of bacon – side-to-side (they can overlap a bit) – at bottom of Instant Pot’s inner pot.
- Select SAUTE – MORE and cook bacon, flipping about halfway through.
- Transfer cooked bacon slices to a paper towel-lined plate. Once drained of any excess fat, break bacon into bits.
- Add chopped 1 onion and minced 1 jalapeno to IP’s inner pot, then sauté for 4 mins.
- Add 3 bay leaves, 1/2 tsp ground cumin, 1/2 tsp dried oregano, and 2 Tbsp minced garlic, then sauté for 1 min.
- Pour in 1/2 cup unsalted chicken stock, then deglaze (scrub off stuck on bits) the bottom of the pot with a wooden spoon.
- Add 2 tbsp coconut aminos, half of the bacon bits, 1 lb rinsed and drained pinto beans, and 3 1/2 cups unsalted chicken stock, then stir until well combined and all beans are submerged.
- Layer with 28 oz fire-roasted crushed tomatoes. Resist the urge to stir!
- Seal lid and select PRESSURE COOK (or MANUAL) for 45 mins.
- When cooking cycle completed, allow a 20-min natural release.
- Select CANCEL, remove lid, and remove bay leaves.
- If you prefer any additional seasonings, now is the time to add them.
- Select SAUTE – NORMAL, stirring frequently (so they don’t burn on bottom) until beans reach your desired thickness.
- Transfer to bowls and sprinkle (evenly divided) with ¼ cup chopped cilantro and remaining half of bacon bits.
