My take on Cuban Black Beans were born out of the idea to dress up canned black beans since John isn’t a fan of them by themselves and I try to eat them often these days to hit #macros.

White onion, pickled jalapeño, garlic, oregano, cumin, smoked paprika, black pepper, apple cider vinegar, a smidge of sugar… Oh, yum!

TIPS: True Cuban Black Beans would also include green bell pepper. Should you desire to add, I’d recommend 1 small green bell pepper (diced) sautéed with the onion and jalapeño. To make this recipe #LactoVeg, #OvoVeg, #LactoOvoVege, or #Vegan, simply sub vegetable broth for the chicken stock.

Frijoles Negros (Cuban Black Beans) Recipe

Ingredients
  • 1 Tbsp extra virgin olive oil (EVOO)
  • 1/2 Tbsp diced pickled jalapeño
  • 1/2 cup diced white onion
  • 1/2 tsp minced garlic
  • 1 (15 oz) can black beans
  • 1/4 cup chicken stock
  • 1/2 Tbsp apple cider vinegar
  • 1/4 tsp granulated sugar
  • 1 tsp dried oregano
  • 1/4 tsp ground cumin
  • 1/8 tsp smoked paprika
  • 1/16 tsp ground black pepper
  • 1 bay leaf
Directions
  1. Heat a large skillet over medium heat on stovetop.
  2. Add 1 Tbsp EVOO and heat.
  3. Add 1/2 Tbsp diced pickled jalapeño and 1/2 cup diced white onion, and sauté until onions begin to soften (about 4 mins).
  4. Add 1/2 tsp minced garlic, and sauté 1 min.
  5. Open black beans can and pour most of the liquid out, but don’t fully drain (and don’t rinse!). You want your beans to have a bit of liquid coating them from the can.
  6. Add to skillet slightly drained black beans, 1/4 cup chicken stock, 1/2 Tbsp apple cider vinegar, 1/4 tsp granulated sugar, 1 tsp dried oregano, 1/4 tsp ground cumin, 1/8 tsp smoked paprika, and 1/16 tsp ground black pepper – then stir until well-combined.
  7. Place 1 bay leaf in center of mixture (so you can easily find later).
  8. Bring to a boil, then reduce heat to low and simmer, stirring occasionally (removing the bay leaf each time you stir – then replacing it in the center – so that you don’t lose it), for 15 mins.
  9. Remove from heat and remove the bay leaf.
