γαρίδες σαγανάκι (Garídes Saganáki) Recipe

Ingredients
- 1 Tbsp extra virgin olive oil
- 1 medium red onion (thinly sliced)
- 4 tsp minced garlic
- 1 lb large shrimp (peeled | deveined | tail off)
- 1 (14.5 oz) can petite diced tomatoes (DON’T DRAIN)
- 1 Tbsp lemon juice
- 1 tsp honey
- 1 tsp chili powder
- 1 tsp dried oregano
- 1 tsp dried parsley
- 1 tsp dried thyme
- 1/2 tsp ground black pepper
- 1/4 cup reduced fat Feta cheese (crumbled)
Directions
- Heat a large skillet over medium-high heat on stovetop.
- Add 1 Tbsp extra virgin olive oil and heat.
- Add thinly sliced 1 medium red onion; 4 tsp minced garlic; and 1 lb peeled, deveined, and tail off large shrimp.
- Sauté for 2 mins. NOTE: Shrimp will not be fully cooked at this step.
- Stir in 1 (14.5 oz) can petite diced tomatoes, 1 Tbsp lemon juice, and 1 tsp honey.
- Add 1 tsp chili powder, 1 tsp dried oregano, 1 tsp dried parsley, 1 tsp dried thyme, and 1/2 tsp ground black pepper – stir until well-combined.
- Decrease heat to medium and cook 10 mins, stirring occasionally.
- Remove from heat and sprinkle with feta cheese.
