Garlic Cheese Chaffles

What about 2.5 hours in the kitchen throughout the day gets me:
Italian Summer Casserole
– Bacon Caesar Salad
– Garlic Cheese Chaffles

Okay, I’m really slow at:
1. Following recipes (often have to reread steps)
2. Chopping/prepping (trying to keep all my fingertips)

But, I’m getting faster with more and more practice. And, I’m already improving my timing – when to start stuff for a meal that’s not just one dish… ⏲️

Hubby thought they were good. I thought they were amazing – I haven’t had garlic cheese bread in months!

This recipe makes 3 Garlic Cheese Chaffles in my fun, lil Dash Deluxe Mini Waffle Maker.

Garlic Cheese Chaffles Recipe

Ingredients
  • 1 medium egg
  • 3/4 cup freshly shredded mozzarella cheese, divided (1/2 cup for batter + 1/4 cup for topping)
  • 2 Tbsp almond flour
  • 2 Tbsp unsalted butter, softened
  • 1 tsp garlic powder, divided (1/2 tsp for batter + 1/2 tsp for spread)
  • 1/2 tsp oregano
Directions
  1. Turn on your waffle maker (I don’t oil mine, but you can give it a light spray to both top and bottom grill plates with EVOO if yours typically needs it).
  2. In a small bowl, beat 1 egg.
  3. Add egg bowl: 1/2 cup mozzarella, 2 Tbsp almond flour, 1/2 tsp garlic powder, and 1/2 tsp oregano, then mix well.
  4. Spoon batter into your waffle maker (I use a 1/4 cup measuring cup, a bit underfilled to slowly pour, starting in the center, into my Dash Mini Waffle Maker so as to not overfill).
  5. Close the lid and cook for 3-5 mins (time is dependent upon how crunchy you want your chaffles – I do mine at 3 mins).
  6. While the chaffles are cooking, mix 2 Tbsp butter with 1/2 tsp garlic powder in a small bowl.
  7. Using tongs, move the chaffles to a baking sheet (I use a pizza pan).
  8. Spread the butter mixture equally over the chaffles.
  9. Sprinkle 1/4 cup mozzarella, distributed evenly, over the chaffles.
  10. Bake for about 4 mins at 350 F. (Baking time is just to melt the cheese so it depends on how hot your oven runs.)
  11. If using a flat baking sheet, be sure to move to a cooling rack while you’re plating if you’re not going to grab them off the baking sheet for immediate serving.
