These Garlic & Herb Baby Lima Beans combine a few basic ingredients in just the right way to create something savory, aromatic, and satisfying. They’re easy enough for a weeknight dinner but flavorful enough that you won’t feel like you settled for “just a vegetable.”

And if you happen to have someone at the table who insists they don’t like lima beans? I’d serve them on the table anyway. They might just change their mind.

Let’s give baby lima beans a little more credit.

They’re naturally creamy, mildly sweet, and wonderfully hearty, but they can be pretty forgettable when they’re simply steamed and plopped onto a plate. This recipe takes those humble frozen beans and turns them into a flavorful side dish with garlic, Italian herbs, olive oil, and plenty of freshly cracked black pepper.

And it takes just a few minutes. That’s my kind of vegetable recipe.

Garlic & Herb Baby Lima Beans Recipe

Ingredients
  • 1 (12 oz) bag frozen baby lima bean
  • 1 medium yellow onion, chopped
  • 1 Tbsp extra virgin olive oil
  • 10 g (2 tsp) minced garlic
  • 3/4 tsp Nearly Italian Seasoning 
  • 1/4 tsp ground black pepper
  • 1/8 tsp kosher salt
Directions
  1. Steam 12 oz frozen baby lima beans for 8 mins, then drain thoroughly. I do in microwave with about 1/4 cup of water in a loose fitting lidded bowl for mins, then stir, then 4 more mins.
  2. Heat a medium skillet over medium-low heat on stovetop.
  3. Add 1 Tbsp extra virgin olive oil and heat.
  4. Add chopped 1 medium yellow onion, 3/4 tsp Nearly Italian Seasoning, 1/4 tsp ground black pepper, and 1/8 tsp kosher salt and sauté until onions begin to soften.
  5. Add 2 tsp minced garlic and sauté 30 secs.
  6. Add drained baby lima beans.
  7. Sauté 2 mins until beans are well-coated and warmed through.
