

NOTE: The use of the stock and sauce are really just to give a savory liquid that the IP needs to do its magic since we’re not turning it into a gravy or anything. Feel free to get creative with your liquid base. 😉
Garlic & Parmesan Meatballs Recipe

Ingredients
- 1 pound 93% lean ground beef (could sub with a different % lean or even ground chicken or turkey)
- 1 large egg
- 28 g (1/4 cup) plain bread crumbs
- 30 g (1/4 cup) grated Parmesan cheese
- 40 g (1/4 cup) diced white onion
- 10 g (2 tsp) minced garlic
- 2.4 g (1/2 tsp) kosher salt
- 1/4 tsp ground black pepper
- 8 g (2 Tbsp) chopped fresh curly parsley
- 1/2 cup beef stock (can sub with broth or do veg- or chicken-based if that’s what you’ve got)
- 1/2 cup arrabiata pasta sauce (or any tomato-based sauce you have on hand)
Directions
- In a large bowl, combine 1 pound 93% lean ground beef, 1 large egg, 28 g (1/4 cup) plain bread crumbs, 30 g (1/4 cup) grated Parmesan cheese, 40 g (1/4 cup) diced white onion, 10 g (2 tsp) minced garlic, 2.4 g (1/2 tsp) kosher salt, 1/4 tsp ground black pepper, and 8 g (2 Tbsp) chopped fresh curly parsley – then mix together until well combined. Honestly, mixing w/ gloved hands is your best bet here…
- Roll into 12 (or less, depending on the size you choose) meatballs. Set meatballs aside on a plate until all are rolled. I use a 3-Tbsp cookie scoop.
- Add 1/2 cup beef stock and 1/2 cup arrabiata pasta sauce to the bottom of the Instant Pot’s (IP) inner pot, stirring to combine, and spreading out as evenly as possible.
- Place meatballs on top of the sauce, layering as evenly as possible.
- Close lid, SEAL vent, and select PRESSURE COOK (or MANUAL) for 8 mins.
- When cooking cycle ends, allow a natural release (NR) for 5 mins, then do a quick release (QR), setting to VENT.
- Plate meatballs, leaving sauce in IP.
