NOTE: The use of the stock and sauce are really just to give a savory liquid that the IP needs to do its magic since we’re not turning it into a gravy or anything. Feel free to get creative with your liquid base. 😉

Garlic & Parmesan Meatballs Recipe

Ingredients
  • 1 pound 93% lean ground beef (could sub with a different % lean or even ground chicken or turkey)
  • 1 large egg
  • 1/4 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1/4 cup diced white onion
  • 2 tsp minced garlic
  • 1/2 tsp Kosher salt
  • 1/4 tsp ground black pepper
  • 2 Tbsp chopped fresh curly parsley
  • 1/2 cup beef stock (can sub with broth or do veg or chicken-based if that’s what you’ve got)
  • 1/2 cup arrabiata pasta sauce (or any tomato-based sauce you have on hand)
Directions
  1. In a large bowl, combine 1 pound 93% lean ground beef, 1 large egg, 1/4 cup breadcrumbs, 1/4 cup grated parmesan cheese, 1/4 cup diced white onion, 2 tsp minced garlic, 1/2 tsp Kosher salt, 1/4 tsp ground black pepper, and 2 Tbsp chopped fresh curly parsley – then mix together until well combined. Honestly, mixing w/ gloved hands is your best bet here…
  2. Roll into 12 (or less, depending on the size you choose) meatballs. Set meatballs aside on a plate until all are rolled. I use a 3 tbsp cookie/muffin scoop.
  3. Add 1/2 cup beef stock and 1/2 cup arrabiata pasta sauce to the bottom of the Instant Pot’s inner pot, stirring to combine, and spreading out as evenly as possible.
  4. Place meatballs at bottom of inner pot, layering as evenly as possible.
  5. Seal lid and select PRESSURE COOK (or MANUAL) for 8 mins.
  6. When cooking cycle ends do a quick release (QR).
  7. Plate meatballs, leaving sauce in IP.
