

NOTE: The use of the stock and sauce are really just to give a savory liquid that the IP needs to do its magic since we’re not turning it into a gravy or anything. Feel free to get creative with your liquid base. 😉
Garlic & Parmesan Meatballs Recipe

Ingredients
- 1 pound 93% lean ground beef (could sub with a different % lean or even ground chicken or turkey)
- 1 large egg
- 1/4 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1/4 cup diced white onion
- 2 tsp minced garlic
- 1/2 tsp Kosher salt
- 1/4 tsp ground black pepper
- 2 Tbsp chopped fresh curly parsley
- 1/2 cup beef stock (can sub with broth or do veg or chicken-based if that’s what you’ve got)
- 1/2 cup arrabiata pasta sauce (or any tomato-based sauce you have on hand)
Directions
- In a large bowl, combine 1 pound 93% lean ground beef, 1 large egg, 1/4 cup breadcrumbs, 1/4 cup grated parmesan cheese, 1/4 cup diced white onion, 2 tsp minced garlic, 1/2 tsp Kosher salt, 1/4 tsp ground black pepper, and 2 Tbsp chopped fresh curly parsley – then mix together until well combined. Honestly, mixing w/ gloved hands is your best bet here…
- Roll into 12 (or less, depending on the size you choose) meatballs. Set meatballs aside on a plate until all are rolled. I use a 3 tbsp cookie/muffin scoop.
- Add 1/2 cup beef stock and 1/2 cup arrabiata pasta sauce to the bottom of the Instant Pot’s inner pot, stirring to combine, and spreading out as evenly as possible.
- Place meatballs at bottom of inner pot, layering as evenly as possible.
- Seal lid and select PRESSURE COOK (or MANUAL) for 8 mins.
- When cooking cycle ends do a quick release (QR).
- Plate meatballs, leaving sauce in IP.
