Garlic Parmesan Pork Chops Recipe

Ingredients
  • 1 lb boneless pork chops (about 4 1″ thick chops)
  • 2.4 g (1/2 tsp) kosher salt
  • 1/4 tsp ground black pepper
  • 1/2 cup vegetable stock [IP version only]
  • 1 cup heavy whipping cream
  • 60 g (1/2 cup) grated Parmesan cheese
  • 20 g (4 tsp) minced garlic
  • 1 tsp Nearly Italian Seasoning
  • 1/2 tsp onion powder
  • Optional garnish: freshly chopped parsley
Instant Pot Directions
  • Season 1 lb boneless pork chops with 2.4 g (1/2 tsp) kosher salt and 1/4 tsp ground black pepper.
  • Add 1/2 cup vegetable stock to IP.
  • Place seasoned pork chops on IP’s trivet, then place trivet into pot.
  • Close lid, set to SEAL, select PRESSURE COOK (or MANUAL) for 10 mins. Decrease to 7 mins if chops are thin (about 1/2″ thick).
  • When cooking cycle completes, allow a natural release (NR) for 10 mins then do a quick release (QR), setting to VENT, then set chops aside and keep warm – just make sure pork reaches 145° F.
  • Drain excess stock from pot.
  • In a medium bowl, whisk together 1 cup heavy whipping cream, 60 g (1/2 cup) grated Parmesan cheese, 20 g (4 tsp) minced garlic, 1 tsp Nearly Italian Seasoning, and 1/2 tsp onion powder.
  • Add cream mixture to pot, Select SAUTÉ – NORMAL and cook for 5 mins, whisking frequently.
  • Return cooked chops to finished sauce.
  • Serve the pork chops with the creamy garlic-Parmesan sauce from the IP, garnished with fresh parsley if desired.
Slow Cooker Directions
  • Season 1 lb boneless pork chops with 2.4 g (1/2 tsp) kosher salt and 1/4 tsp ground black pepper.
  • In a medium bowl, whisk together 1 cup heavy whipping cream, 60 g (1/2 cup) grated Parmesan cheese, 20 g (4 tsp) minced garlic, 1 tsp Nearly Italian Seasoning, and 1/2 tsp onion powder.
  • Place seasoned pork chops in slow cooker and pour the garlic-Parmesan mixture over them.
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours. 4 hours was too long (somewhat mushy chops, but still very edible) in my IP on slow cooker setting so I go closer to 3 hours – just make sure pork reaches 145° F.
  • Serve the pork chops with the creamy garlic-Parmesan sauce from the slow cooker, garnished with freshly chopped parsley if desired.
