Ingredients
  • 1 lb 99% extra lean ground turkey
  • 29 oz petite diced tomatoes
  • 3 cups low-sodium beef broth
  • 16 oz tomato sauce
  • 1 1/4 cups yellow onion, chopped [about 1 small]
  • 1 cup carrots, chopped [about 2 medium]
  • 5.6 oz uncooked small elbow pasta
  • 2 Tbsp extra virgin olive oil (EVOO) [divided]
  • 1 Tbsp Worcestershire sauce
  • 2 tsp minced garlic
  • 3/4 tsp dried thyme
  • 1/2 tsp pink Himalayan salt
  • 1/4 tsp + 1/8 tsp ground black pepper (divided)
  • 1/8 tsp Sea Salt
  • 2 bay leaves
  • Grated Parmesan cheese, to taste, for serving
Directions
  1. Heat a large pot over medium-high heat on stovetop.
  2. Add 1 Tbsp EVOO and heat.
  3. Add 1 1/4 cups chopped yellow onion and 1 cup chopped carrots, then sauté 3 mins.
  4. Add 2 tsp minced garlic, then sauté 1 min.
  5. Turn off heat and transfer veggie mixture to a plate and set aside. I keep mine in the microwave.
  6. Add remaining 1 Tbsp EVOO to pot and return to medium-high heat.
  7. Add 1 lb 99% extra lean ground turkey and season with 1/8 tsp Sea Salt and 1/8 tsp ground black pepper.
  8. Cook turkey, breaking up into smaller pieces (but not into crumbles) until fully cooked (all white).
  9. Return veggie mixture to pot.
  10. Add 29 oz petite diced tomatoes, 3 cups low-sodium beef broth, 16 oz tomato sauce, 1 Tbsp Worcestershire sauce, 3/4 tsp dried thyme, 1/2 tsp pink Himalayan salt, remaining 1/4 tsp ground black pepper, and 2 bay leaves, then bring to a boil.
  11. Add 5.6 oz uncooked small elbow pasta, cover, and reduce heat to medium.
  12. Boil, stirring occasionally, until pasta has cooked through, about 15 – 20 mins.
  13. Remove bay leaves. then transfer to bowls and garnish with grated parmesan cheese, if desired.

NOTE: Nutrition Facts don’t include grated Parmesan cheese garnish.
