Goulash Recipe
Ingredients
- 1 lb 99% extra lean ground turkey
- 29 oz petite diced tomatoes
- 3 cups low-sodium beef broth
- 16 oz tomato sauce
- 1 1/4 cups yellow onion, chopped [about 1 small]
- 1 cup carrots, chopped [about 2 medium]
- 5.6 oz uncooked small elbow pasta
- 2 Tbsp extra virgin olive oil (EVOO) [divided]
- 1 Tbsp Worcestershire sauce
- 2 tsp minced garlic
- 3/4 tsp dried thyme
- 1/2 tsp pink Himalayan salt
- 1/4 tsp + 1/8 tsp ground black pepper (divided)
- 1/8 tsp Sea Salt
- 2 bay leaves
- Grated Parmesan cheese, to taste, for serving
Directions
- Heat a large pot over medium-high heat on stovetop.
- Add 1 Tbsp EVOO and heat.
- Add 1 1/4 cups chopped yellow onion and 1 cup chopped carrots, then sauté 3 mins.
- Add 2 tsp minced garlic, then sauté 1 min.
- Turn off heat and transfer veggie mixture to a plate and set aside. I keep mine in the microwave.
- Add remaining 1 Tbsp EVOO to pot and return to medium-high heat.
- Add 1 lb 99% extra lean ground turkey and season with 1/8 tsp Sea Salt and 1/8 tsp ground black pepper.
- Cook turkey, breaking up into smaller pieces (but not into crumbles) until fully cooked (all white).
- Return veggie mixture to pot.
- Add 29 oz petite diced tomatoes, 3 cups low-sodium beef broth, 16 oz tomato sauce, 1 Tbsp Worcestershire sauce, 3/4 tsp dried thyme, 1/2 tsp pink Himalayan salt, remaining 1/4 tsp ground black pepper, and 2 bay leaves, then bring to a boil.
- Add 5.6 oz uncooked small elbow pasta, cover, and reduce heat to medium.
- Boil, stirring occasionally, until pasta has cooked through, about 15 – 20 mins.
- Remove bay leaves. then transfer to bowls and garnish with grated parmesan cheese, if desired.
NOTE: Nutrition Facts don’t include grated Parmesan cheese garnish.
