Greek Chicken Recipe

Ingredients
  • 4 tsp minced garlic
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1/3 tsp dried thyme
  • 2 tsp dried parsley
  • 1/3 cup extra virgin olive oil (EVOO)
  • 4 Tbsp lemon juice
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 2 lbs thin-cut boneless, skinless chicken breast
Directions
  1. In a large glass or ceramic mixing bowl, whisk together 4 tsp minced garlic, 2 tsp dried oregano, 1 tsp paprika, 1/3 tsp dried thyme, 2 tsp dried parsley, 1/3 cup EVOO, 4 Tbsp lemon juice, 1/2 tsp kosher salt, and 1/2 tsp ground black pepper, until well-combined.
  2. Place 2 lbs thin-cut boneless, skinless chicken breast in the marinade and turn to cover in marinade, until well-coated.
  3. Cover (with a lid or cling wrap) and refrigerate for 4 hours.
  4. Lightly oil BBQ grates and preheat BBQ to medium.
  5. Arrange the chicken in a single layer on the grates and grill for 5 mins per side, until internal temperature reaches 165°F.
