Green Beans Amandine Recipe

Ingredients
- 1/4 tsp kosher salt, divided (1 large pinch about [1/8 tsp] for water and remainder to season beans later)
- 6 oz fresh green beans, trimmed
- 1 Tbsp butter
- 1 1/2 Tbsp sliced almonds
- 1/3 shallot, thinly sliced into rings
- 3/4 tsp minced garlic
- 2 tsp Meyer lemon zest
- 2 1/4 Tbsp Meyer lemon juice
- 1 pinch (about 1/16 tsp) ground black pepper
- 2 Tbsp filtered water
Directions
- Fill a medium stockpot about 1/2 way with water.
- Bring to a boil on stovetop.
- Add 1/8 tsp kosher salt to water.
- Add 6 oz trimmed fresh green beans and blanch for 4 mins.
- Drain blanched green beans and immediately rinse in cold water. Allow to continue draining until you need later.
- Head a large skillet over medium-low heat.
- Add 1 Tbsp butter and melt.
- Increase to medium heat and add 1 1/2 Tbsp sliced almonds and toast 4 mins, stirring frequently.
- Add thinly sliced 1/3 shallot and saute 1 min, until fragrant.
- Add 3/4 tsp minced garlic and saute 30 secs, until fragrant.
- Add 2 1/4 Tbsp Meyer lemon juice, 1/16 tsp ground black pepper, 2 1/4 Tbsp filtered water, and remaining 1/8 tsp kosher salt, then give a few quick stirs to combine.
- Add blanched green beans and saute, tossing constantly for 2 mins.
