These Grilled Fajita Veggies are part of my new favorite meal base of this body recomposition season! I pair them with our Fajita Chicken Strips for a whole lotta yum!

SO much flavor. There is a delicate balance of lime, rice vinegar, and spices. De-licious!

My boys eat theirs with Spanish rice and flour tortillas.

TIP: To make this recipe #Paleo or #Whole30, swap out the seasoned rice vinegar for: coconut vinegar, unseasoned rice vinegar (without added sugar or salt), or apple cider vinegar.

Grilled Fajita Veggies Recipe

Ingredients
  • 1 tsp chili powder
  • 1 tsp ground coriander
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/4 tsp pink Himalayan salt
  • 1/8 tsp ground black pepper
  • 1/8 tsp smoked paprika
  • 1/4 cup extra virgin olive oil (EVOO)
  • 2 Tbsp lime juice
  • 1 Tbsp seasoned rice vinegar
  • 1 tsp minced garlic
  • 8 oz whole white mushrooms
  • 1 yellow onion, cut into eighths
  • 1 green bell pepper, cut into slices
  • 1 red bell pepper, cut into slices
Directions
  1. In a small bowl, whisk together 1 tsp chili powder, 1 tsp ground coriander, 1 tsp garlic powder, 1/2 tsp ground cumin, 1/4 tsp pink Himalayan salt, 1/8 tsp ground black pepper, and 1/8 tsp smoked paprika.
  2. Whisk in 1/4 cup EVOO, 2 Tbsp lime juice, 1 Tbsp seasoned rice vinegar, and 1 tsp minced garlic.
  3. To a gallon-size Ziploc bag (or large shallow dish with a lid/cling wrap) add 8 oz whole white mushrooms, eighths of 1 yellow onion, sliced 1 green bell pepper, and sliced 1 red bell pepper.
  4. If using a bag, seal it. Then, toss gently to cover veggies in marinade, until well-coated.
  5. If using a dish, cover with lid or cling wrap.
  6. Refrigerate for at least 1 hr (up to overnight).
  7. Preheat BBQ.
  8. Transfer marinated veggies to a grill roasting pan and grill until reach desired doneness.
