I crafted this delicious #GuacamoleMagic to accompany my Northshore Nachos. Can we say yum-yum?!

Not that we know what leftovers are like, but… you can leave the pits in the finished product and store in an airtight container for up to 2 days.

TIP: I LOVE cilantro, but my kid just can’t stand the taste so I leave it out of the recipe below and it’s amazing without it. If you, too, are a cilantro lover, try adding about 1 1/4 tsp chopped leaves (just after Step 3). šŸ˜‰

Guacamole Recipe

Ingredients
  • 1/3 cup diced white onion
  • 1 Tbsp lime juice
  • 1/2 cup diced Roma tomato
  • 2 Tbsp minced jalapeƱo
  • 1 lb ripe avocados (this is pit-in weight)
  • 1/2 teaspoon kosher salt
  • A dash of hot sauce
Directions
  1. In a medium bowl, combine 1/3 cup diced white onion and 1 Tbsp lime juice.
  2. Stir in 1/2 cup diced Roma tomato.
  3. Stir in 2 Tbsp minced jalapeƱo.
  4. Halve and pit 1 lb ripe avocados.
  5. Scoop avocado flesh into onion, tomato, and jalapeƱo mixture.
  6. Mash avocado to a chunky consistency. I just use a large fork for this.
  7. Add 1/2 teaspoon kosher salt and a dash of
    hot sauce, then mix until well-combined.
