I’m spending some time this week playing with recipes from my grandmas and mom…
Tonight we scarfed this cheesy deliciousness (altered from a Gramma Millie recipe for Hashbrown Ham Quiche).
My husband says he can eat this 4 days a week. It’s his new favorite food.
I initially served this dish with my Honey Vanilla Rainbow Fruit Salad.
Ham Nest Bake Recipe
Ingredients
- 3 cups hash browns, uncooked but not frozen
- 2 eggs
- 1 cup sharp Cheddar cheese, shredded
- 1 cup Swiss cheese, shredded
- 1 cup cooked ham, diced
- 1/2 cup heavy whipping cream
- 1/4 cup butter, melted (divided: 2 tsp to grease baking dish + 3 1/3 Tbsp for hash brown crust)
- 1/4 tsp seasoned salt
Directions
- Preheat oven to 425◦ F.
- Grease a 9″ round baking dish with 2 tsp melted butter then set aside.
- Press moisture from hash browns. I like to spread them out on paper towels and use more paper towels to press down for this step.
- Add pressed hash browns to baking dish and press into a pie shell shape (even on bottom and running up sides of dish).
- Drizzle remaining 3 1/3 Tbsp melted butter over hash brown crust.
- Bake 20-25 mins until edges of hash brown crust are browning.
- In a large bowl, combine 1 cup shredded sharp Cheddar cheese, 1 cup shredded Swiss cheese, and 1 cup diced cooked ham. Keep this bowl around – you’ll need it again before washing!
- Fill baked hash brown crust with cheese and ham mixture, spreading evenly.
- Preheat oven to 350◦ F.
- In same large bowl, beat 2 eggs, 1/2 cup heavy whipping cream, and 1/4 tsp seasoned salt.
- Pour egg mixture evenly over cheese and ham mixture.
- Bake 20-25 mins, until knife inserted in center comes out clean.
- Remove from oven and allow to cool 10 mins before slicing/serving.
