Holiday Green Beans

First made these for Easter 2023 to accompany my Glazed Ham and Dauphinoise Potatoes.

Couldn’t decide if these or the potatoes were my favorite from that meal! I realized that later these probably *won* as there were no leftovers of this dish (and there were only 3 of us!).

Holiday Green Beans Recipe

Ingredients
  • 2 (14.5 oz) cans no salt added cut green beans, drained
  • 1 (14.5 oz) can cut green beans with natural sea salt, drained
  • 2 cups low-sodium chicken broth
  • 1 cup heavy whipping cream
  • 3/4 cup sharp cheddar cheese
  • 1/3 cup onions, diced
  • 3 Tbsp butter
  • 1 oz cream cheese, softened
  • 1 1/2 Tbsp dried minced onion
  • 1 Tbsp grated parmesan cheese
  • 2 tsp minced garlic
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp freshly ground sea salt
  • 1/4 tsp ground nutmeg
  • extra virgin olive oil (EVOO) spray
Directions
  1. Preheat oven to 350.
  2. Lightly spray a 9″ x 13″ baking dish w/ EVOO.
  3. In a large skillet, melt 3 Tbsp butter over medium heat on stovetop
  4. Add 1/3 cup diced onion, 2 tsp minced garlic, 1/2 tsp black pepper, 1/2 tsp sea salt, and 1/4 tsp ground nutmeg and sauté until the onions are translucent.
  5. Add 2 cups chicken broth, 1 oz softened cream cheese, and 1 cup heavy whipping cream and simmer over medium-high heat until reduces and thickens. This is gonna take at least 25 mins.
  6. Add 1 1/2 can green beans to baking dish.
  7. Cover with soup mixture.
  8. Add remaining 1 1/2 can green beans.
  9. Sprinkle with 1 Tbsp parmesan cheese then 1 1/2 Tbsp minced onion.
  10. Sprinkle with 3/4 cup cheddar cheese.
  11. Bake for 30 mins.
  12. After removing from oven, allow to set for 5 mins before serving.
  13. Serve with a slotted spoon if you didn’t reduce until sauce was really thick – I promise the flavor will be infused no matter what consistency you brought your sauce to in Step 5!
