My boys were actually a bit overwhelmed by the orange and I LOVED it. Feel free to adjust your zest game according to your tastes.
I use 2 large Navel oranges to make the orange ingredients in this recipe…
TIPS: If you don’t use salted butter, you may want to add some salt to help the sweetness pop.
To make this recipe #OvoVege or #Vegan sub out the butter for a vegan butter without trans fats that has an avocado oil or olive oil base.

Holiday Sweet Potato Mash Recipe

Ingredients
- 2 lbs (about 2 large) sweet potatoes, peeled and cut in 1-inch cubes
- 2 oranges, divided (1 cup freshly squeezed orange juice + 1 Tbsp orange zest)
- 2 Tbsp butter
- 2 Tbsp dark brown sugar
- 1/2 tsp cinnamon
Directions
- In Instant Pot’s inner pot, whisk together 1 cup orange juice, 1 Tbsp orange zest, 2 Tbsp dark brown sugar, and 1/2 tsp cinnamon.
- Add 2 lbs cubed sweet potatoes, stirring until well coated.
- SEAL lid and select PRESSURE COOK (or MANUAL) for 5 mins.
- When the cooking cycle completes, do a quick release.
- Once the pressure pin drops, select CANCEL and open (always away from your face!).
- Use an immersion blender to *mash* to desired consistency.
- Add 2 Tbsp butter, stirring until fully melted.
