We really like a version of this from the local grocery deli, so I wanted to take a stab at it at home – I prefer to know what goes in my food if I have the energy to make instead of buy.

This is the recipe I was crafting when I first learned that artichokes come in cans!

Great as a side or the main deal… De-licious!!! 😋

And don’t be shy about snagging this amazing Parmesan Vinaigrette for other uses – amazing with or without the Parmesan!

TIPS: To make this recipe #Vegan, sub out the honey for agave or maple syrup.

Pasta Salad Ingredients
  • 16 oz tri-color rotini pasta
  • 7 oz artichoke hearts, chopped
  • 1 cup Parmesan Vinaigrette (divided) [see Parmesan Vinaigrette recipe just below]
  • 4 oz grape tomatoes, halved
  • 1/2 cup black olives, sliced
Parmesan Vinaigrette Ingredients
  • 6 Tbsp extra virgin olive oil (EVOO)
  • 3 Tbsp lemon juice
  • 3 Tbsp Parmesan cheese
  • 3 Tbsp white wine vinegar
  • 1 1/2 tsp honey
  • 1 1/2 tsp dried oregano
  • 1 tsp minced garlic
  • 3/4 tsp Dijon mustard
  • 3/4 tsp dried thyme
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
Directions
  1. Cook 16 oz tri-color rotini pasta according to package instructions – be sure to leave a bit more al dente than you normally would for topping with pasta sauce.
  2. While pasta is cooking… In a small bowl, whisk together 6 Tbsp EVOO, 3 Tbsp lemon juice, 3 Tbsp Parmesan cheese, 3 Tbsp white wine vinegar, 1 1/2 tsp honey, 1 1/2 tsp dried oregano, 1 tsp garlic, 3/4 tsp Dijon mustard, 3/4 tsp dried thyme, 1/2 tsp kosher salt, and 1/4 tsp ground black pepper – then set aside.
  3. Drain cooked pasta, then rinse with cold water.
  4. In a large glass or ceramic bowl, add in order: 16 oz drained and cooled pasta, 7 oz chopped artichoke hearts, 4 oz halved grape tomatoes, and 1/2 cup sliced black olives.
  5. Drizzle with 1/2 cup Parmesan Vinaigrette then stir gently until well-combined.
  6. Refrigerate overnight (definitely for at least 2 hours).
  7. Just before serving, drizzle with remaining 1/2 cup Parmesan Vinaigrette then stir to combine.
