My sister couldn’t join us for TDay in Central CA so she asked for a do-over in early Dec. She and I both contributed food and gathered with my parents for a good time of visiting, gnom gnom, and XMas tree decorating.
One of my contributions was my favorite cranberry sauce, crafted from a spiced orange version some years ago.
I love this stuff! I put it on *everything*: TDay meats (ham, turkey), mashed potatoes, sweet potatoes (unless they have marshmallows on top), and stuffing.
TIPS: I like to make the night before needed so that it really cools/gels overnight in the fridge.
Jamaican Cranberry Sauce Recipe
Ingredients
- 2 lbs fresh cranberries
- 2 cups packed brown sugar
- 2 cups orange juice
- 2 cups water
- 2 Tbsp orange zest
- 1 1/2 tsp ground cinnamon
Directions
- Add 2 lbs cranberries, 2 Tbsp zest, 1 1/2 tsp cinnamon, 2 cups juice, 2 cups brown sugar, and 2 cups water in a large skillet on stovetop.
- Stir all together a bit then bring to a boil.
- Once boiling, turn down heat and simmer for about 75 mins, until sauce thickens, stirring occasionally to prevent from sticking to the bottom.
- Allow to cool for about 15 mins, then refrigerate in an airtight container.
