Lemon Aioli Tuna Patties Recipe

Ingredients
  • 2 (5 oz) cans solid white albacore tuna in water, drained
  • 2 large eggs
  • 1 lemon, zested and juiced
  • 1/2 cup freshly shredded sharp cheddar cheese
  • 3/4 cup Best Foods Vegan Dressing & Spread, divided (1/4 cup for tuna mixture + 1/2 cup for sauce)
  • 1/4 cup onion, diced
  • 1 Tbsp extra virgin olive oil (EVOO)
  • 3 1/4 tsp dried parsley, divided (3 tsp for tuna mixture + 1/4 tsp for sauce)
  • 1 tsp minced garlic
  • 1/2 tsp garlic powder
  • 3/8 tsp freshly ground black pepper, divided (1/4 tsp for tuna mixture + 1/8 tsp [1 *large* pinch] for sauce)
Directions
  1. In a large bowl, mix together 2 – 5 oz cans of drained tuna, 1/4 cup diced onion, and 3 tsp parsley.
  2. Add 2 eggs, 1/2 cup shredded cheddar cheese, 1/4 cup vegan dressing, 1/2 tsp garlic powder, and 1/4 tsp black pepper, then mix until well combined.
  3. Heat a large skillet over medium heat on stovetop.
  4. Add 1 Tbsp EVOO and heat.
  5. Drop 1/2 cup of tuna mixture into skillet – no more than 3 scoops at a time – and cook until bottoms are browned (about 7 mins for my level of desired *doneness*).
  6. Flip patties and continue cooking until both sides are browned (about 5 mins for my level of desired *doneness*).
  7. Once cooked, transfer patties to a plate covered with paper towels and allow to cool.
  8. In a small bowl, mix together remaining 1/2 cup vegan dressing, 1 tsp minced garlic, remaining 1/4 tsp parsley, and remaining 1/8 tsp black pepper.
  9. Add zest from 1 lemon and juice from 1 lemon, then stir until well blended.
  10. Plate patties and drizzle with sauce.
