Vegetarian nite requires gettin’ crafty. I don’t have much of a meatless repertoire for meals that fall w/in my various eating goals of the last 2 years.
And… I’m darn proud of this one! My husband started eating from the pot w/ a look of rapture on his face.
I had planned to serve mine over brown rice but must have already eaten it w/ something else. So, I had to steal some of my boys’ Thai Jasmine Rice.

Lentil Tikka Masala Recipe
Ingredients
- 1 (15 oz) can diced tomatoes (DO NOT DRAIN)
- 1 1/2 cups uncooked green lentils
- 1 1/2 cups vegetable broth
- 1 small yellow onion, chopped
- 1/2 yellow bell pepper, chopped
- 1/2 cup lite coconut milk
- 2 Tbsp butter
- 3 tsp minced garlic
- 2 tsp garam masala (see my Garam Masala recipe)
- 1 1/2 tsp freshly ground sea salt
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1/3 tsp ground ginger
- 1/4 tsp cayenne pepper
Directions
- Set Instant Pot to SAUTÉ – NORMAL and allow to heat for at least 30 secs.
- Add 2 Tbsp butter to inner pot and melt.
- Add chopped 1 yellow onion and chopped 1/2 yellow bell peppers, then sauté until veggies begin to soften.
- Add 3 tsp minced garlic, 2 tsp Garam Masala seasoning, 1 1/2 tsp salt, 1 tsp coriander, 1 tsp cumin, 1 tsp turmeric, 1/4 tsp cayenne, and 1/3 tsp ginger then continue to sauté for 1 min.
- Add 1 – 15 oz can of undrained diced tomatoes, 1/2 cup lite coconut milk, 1 1/2 cups uncooked green lentils, and 1 1/2 cups vegetable broth then stir well to combine.
- Close the lid and set to SEAL.
- Cook on PRESSURE COOK (or MANUAL) for 15 mins.
- When cooking cycle completes, allow a natural release for 10 mins, then do a quick release of any remaining pressure and remove lid.
- Stir then plate.
