

This turned into a delicious one-pot dinner from the IP.
Turkey smoked sausage nestled into a seasoned lentil and chicken stock base and surrounded by Granny Smith apple chunks with apple cider vinegar stirred in at the end.
May sound like a weird combination, but it’s a German-inspired sweet and savory yuminess!

Ingredients
- 1 Tbsp extra virgin olive oil (EVOO)
- 1 medium yellow onion, diced
- 1/2 tsp kosher salt
- 1 medium Granny Smith apple, cut into 1/2″ pieces
- 2/3 tsp dried thyme leaves
- 1 tsp ground cumin
- 2 tsp minced garlic
- 2 3/4 cups chicken stock
- 1 1/2 cups dry lentils, rinsed &sorted
- 1 bay leaf
- 2 (13 oz) turkey smoked sausages
- 2 tsp apple cider vinegar
Directions
- Set Instant Pot to SAUTÉ – NORMAL.
- Once display reads, HOT, add 1 Tbsp EVOO, then heat for 10 secs.
- Add diced 1 medium yellow onion and 1/2 tsp kosher salt, then sauté 1 min.
- Add 1/2″ pieces of 1 Granny Smith apple, 2/3 tsp dried thyme leaves, and 1 tsp ground cumin, then sauté 6 mins.
- Add 2 tsp minced garlic, then sauté 1 min.
- Add 2 3/4 cups chicken stock and rinsed & sorted 1 1/2 cups dry lentils, and stir until well-combined.
- Add 2 (13 oz) turkey smoked sausages and be sure to mostly submerge.
- Place 1 bay leaf in center of pot.
- Seal lid, selec PRESSURE COOK (or MANUAL) for 9 mins.
- Once cooking cycle completes, allow a natural release (NR) for 10 mins, then do a quick release (QR).
- Once pressure pin drops, remove lid (open away from you) and set aside.
- Remove bay leaf and discard.
- Transfer cooked sausages to a cutting board.
- To cooked lentil mixture, add 2 tsp apple cider vinegar and stir gently to combine.
- Cut sausages into 1″ inch pieces.
- Transfer lentil mixture to individual serving bowls and top with an equal number of sausage pieces.
