Took another stab at a pasta *alla Vodka* dish. This one turned out quite well. I’ve now realized I’d never actually eaten a similar dish before.
These were expensive #KitchenExperiments for these realizations after having to replace my almost $300 blender from my last attempt at this dish. I’ll just soothe myself with an accidentally created glazed pumpkin cookie…
Hubby wanted seconds, so that’s a win I guess. My kid normally likes cream based sauces but he’s not here as they are celebrating with a dinner with some castmates (having just wrapped their 2+ week production of Little Shop of Horrors today). I’ll get him to try some to see his thoughts, but I’m thinking he won’t be a huge fan of the onions…
Macaroni alla Vodka Recipe
Ingredients
- 1 lb large elbow macaroni
- 1 medium yellow onion, chopped
- 15 oz tomato sauce
- 1 cup heavy whipping cream
- 1 cup vodka
- 3 Tbsp salted butter
- 2 Tbsp extra virgin olive oil (EVOO)
- 3 tsp minced garlic
- 1/4 tsp kosher salt, plus more to taste
- 1/8 tsp crushed red pepper
- 1/8 tsp ground black pepper, plus more to taste
- Garnish with grated Parmesan cheese
Directions
- Cook pasta according to package directions (you don’t want too soft as will be added to sauce when done). Then, drain and set aside.
- Heat a large skillet over medium heat on stovetop.
- Add 2 Tbsp salted butter and 2 Tbsp EVOO and heat.
- Saute chopped 1 yellow onion and 3 tsp minced garlic butter, until soft.
- Turn off heat (if using open flame), then add 1 cup vodka.
- Return to medium heat and cook 3 mins to reduce a bit.
- Stir in 15 oz tomato sauce, until well combined.
- Reduce heat to low (as low as you can go while still simmering).
- Stir in the heavy whipping cream, until well combined.
- Stir in 1/4 tsp kosher salt, 1/8 tsp crushed red pepper, and 1/8 tsp ground black pepper.
- Stir in remaining 1 Tbsp salted butter.
- Add drained pasta to sauce and stir gently until well coated.
NOTE: Nutrition Facts don’t include garnish of grated Parmesan Cheese.
