It was vegetarian nite and I sure miss the Islands Nachos from @islandsburgers.

Allow me to introduce you to my refried black beans version: Northshore Nachos!

Northshore Nachos Recipe

Directions
  1. Preheat oven to 400° F.
  2. Line an extra large baking sheet with parchment paper.
  3. In a medium bowl, combine 5 oz shredded Monterey Jack cheese, 5 oz shredded sharp cheddar cheese, and 2 oz shredded extra sharp cheddar cheese.
  4. On prepared baking sheet, spread 4 oz tortilla chips in an even layer.
  5. Sprinkle with 2 oz of cheese blend.
  6. Top with Tbsp-size smudges of 10.5 oz refried black beans, evenly spaced-ish.
  7. Sprinkle with 2 oz of cheese blend.
  8. Top with 2 Tbsp pickled jalapeño slices, evenly spaced-ish.
  9. Layer 4 oz tortilla chips in an even layer, gently pressing into refried beans.
  10. Sprinkle with 4 oz of cheese blend. 
  11. Top with Tbsp-size smudges of 10.5 oz refried black beans, evenly spaced-ish.
  12. Sprinkle with 2 oz of cheese blend.
  13. Top with 2 Tbsp pickled jalapeño slices, evenly spaced-ish.
  14. Layer 4 oz tortilla chips in an even layer, gently pressing into refried beans.
  15. Sprinkle with 2 oz of cheese blend. 
  16. Top with 2 Tbsp pickled jalapeño slices, evenly spaced-ish.
  17. Bake for 10 mins, until cheese is fully melted.
  18. Garnish and serve!
