

It was vegetarian nite and I sure miss the Islands Nachos from @islandsburgers.
Allow me to introduce you to my refried black beans version: Northshore Nachos!

Northshore Nachos Recipe

Ingredients
- 12 oz tortilla chips (divided)
- 5 oz shredded Monterey Jack cheese (divided)
- 5 oz shredded sharp cheddar cheese (divided)
- 2 oz shredded extra sharp cheddar cheese (divided)
- 2 (16 oz) cans low fat refried black beans (divided)
- 6 Tbsp picked jalapeño slices (divided)
- Garnish suggestions: Guacamole, Salsa, Sour Cream
Directions
- Preheat oven to 400° F.
- Line an extra large baking sheet with parchment paper.
- In a medium bowl, combine 5 oz shredded Monterey Jack cheese, 5 oz shredded sharp cheddar cheese, and 2 oz shredded extra sharp cheddar cheese.
- On prepared baking sheet, spread 4 oz tortilla chips in an even layer.
- Sprinkle with 2 oz of cheese blend.
- Top with Tbsp-size smudges of 10.5 oz refried black beans, evenly spaced-ish.
- Sprinkle with 2 oz of cheese blend.
- Top with 2 Tbsp pickled jalapeño slices, evenly spaced-ish.
- Layer 4 oz tortilla chips in an even layer, gently pressing into refried beans.
- Sprinkle with 4 oz of cheese blend.
- Top with Tbsp-size smudges of 10.5 oz refried black beans, evenly spaced-ish.
- Sprinkle with 2 oz of cheese blend.
- Top with 2 Tbsp pickled jalapeño slices, evenly spaced-ish.
- Layer 4 oz tortilla chips in an even layer, gently pressing into refried beans.
- Sprinkle with 2 oz of cheese blend.
- Top with 2 Tbsp pickled jalapeño slices, evenly spaced-ish.
- Bake for 10 mins, until cheese is fully melted.
- Garnish and serve!
