Panko Crusted Pork Tenderloin Medallions

So, so good. This brand new recipe is a keeper for sure! 😋😋😋

As you can see in the picture above, I served this w/ my Garlic Cheese Herbed Cauliflower Crown.

I plan to play around with coating medallions in cheese, then egg, then Panko mixture, too…

Panko Crusted Pork Tenderloin Medallions Recipe

Ingredients
  • 1 lb pork tenderloin, cut into medallions
  • 1 large egg
  • 1/2 cup Panko breadcrumbs
  • 6 Tbsp grated Parmesan cheese
  • 2 Tbsp extra virgin olive oil (EVOO)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp freshly ground black pepper
Directions
  1. In a shallow plate, lightly beat 1 egg.
  2. In another shallow plate, whisk together 1/2 cup breadcrumbs, 1/2 tsp basil, 1/2 tsp oregano, 1 tsp garlic powder, 1 tsp onion powder, and 1/4 tsp black pepper.
  3. In a third shallow plate, place 6 Tbsp grated Parmesan.
  4. Heat a large skillet on stovetop over medium-high heat.
  5. Add 1 Tbsp EVOO and heat.
  6. Dip each medallion first in beaten egg, then Panko mixture, and then Parmesan.
  7. Add 1/2 of medallions to skillet and brown each side (about 4 mins each side) then set aside.
  8. Add remaining 1 Tbsp EVOO to skillet.
  9. Add remaining 1/2 of medallions to skillet and brown each side (about 4 mins each side) then plate all medallions or serve on platter.
