Ingredients
  • 1 Tbsp extra virgin olive oil
  • 1.5 lbs mini gold potatoes, quartered
  • 110 g chopped red bell pepper (about 1 medium)
  • 2 tsp Nearly Italian Seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1/2 cup low sodium chicken broth
Directions
  1. On Instant Pot (IP), select SAUTÉ – NORMAL.
  2. To IP’S inner pot, add 1 Tbsp extra virgin olive oil and heat oil until IP reads “HOT.”
  3. Add quartered 1.5 lb mini gold potatoes and 110 g chopped red bell pepper, then sauté 5 mins.
  4. Add 2 tsp Nearly Italian Seasoning, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika, 1/2 tsp kosher salt, 1/4 tsp ground black pepper and stir until potatoes and bell pepper are well-coated.
  5. Pour 1/2 cup chicken stock over seasoned potatoes and bell pepper.
  6. SEAL lid and select PRESSURE COOK (or MANUAL) for 5 mins.
  7. When cooking cycle completes, do a quick release (QR) then remove lid.
  8. Gently stir, then serve.
