Hubby’s childhood memory realized… 💭

So… When a recipe for something in the Instant Pot refers to “manual” or “cook on high pressure,” it’s a recipe for an older Instant Pot model. To use the recipe when you have a newer model, this means you should select the “pressure cook” button. This info is all over the internet but it didn’t click for me until I ruined the first version of this recipe. 💡

My husband was kind enough to form the meatballs as I’m not a fan of touching raw meat. 😉

Pretty good and really filling. I only made it thru 2 of the 4 I took as I had a salad first. 😋

Porcupine Meatballs Recipe

Ingredients
  • 1 lb 90% lean ground beef
  • 15 oz tomato sauce
  • 1 medium yellow onion, chopped
  • 1 egg
  • 1/2 cup long grain rice
  • 1/2 cup filtered water
  • 2 Tbsp extra virgin olive oil (EVOO)
  • 1 Tbsp Worcestershire sauce
  • 2 rounded tsp minced garlic
  • 1 tsp freshly ground sea salt
  • 1/2 tsp dried basil
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp oregano
Directions
  1. In a large bowl, combine 1 lb ground beef, 1 egg, 1/2 cup long grain rice, 1 tsp salt, 1/2 tsp basil, 1/2 tsp black pepper, and 1/2 tsp oregano.
  2. Roll into 1″ (or larger – we almost always do larger, maybe 2 1/2″) meatballs.
  3. Set Instant Pot (IP) to SAUTÉ – NORMAL function.
  4. Add 2 Tbsp EVOO to IP’s inner pot and heat.
  5. Add chopped 1 yellow onion and sauté until onion is starting to soften.
  6. Add 2 rounded tsp minced garlic and continue to sauté for about 30 secs, until fragrant.
  7. Stir in 15 oz tomato sauce, 1/2 cup filtered water, and 1 Tbsp Worcestershire, then select CANCEL on IP.
  8. Lower meatballs into sauce, making just one single layer, then spoon tomato sauce mixture over each. I find this easiest by adding about 1/2 the meatballs, covering w/ sauce, then repeating w/ the other 1/2 of the meatballs.
  9. SEAL the lid and seled PRESSURE COOK (or MANUAL) for 20 mins.
  10. Once the cooking cycle ends, do a quick release.
  11. Once the pressure pin drops, open the lid away from you.
  12. Plate meatballs, spooning sauce over them.
