Pork Tenderloin Medallions in Bleu Cheese Sauce

So much yum on one plate…

My husband is the pork tenderloin cooking king! Pretty sure I was mostly in his way making this one. We’ve done this recipe before, but not w/ photos, so I wanted to *help*… 🤣🤣🤣

This cream sauce is so rich!

Pork Tenderloin Medallions in Bleu Cheese Sauce Recipe

Ingredients
  • 1 lb pork tenderloin, sliced into 1/2″-thick medallions
  • 1/3 cup heavy whipping cream
  • 2 Tbsp unsalted butter
  • 3 Tbsp crumbled bleu cheese
  • 1 Tbsp fresh parsley (leaves only), chopped
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
Directions
  1. Combine 1/2 tsp sea salt and 1/4 tsp ground black pepper in a ramekin and set aside.
  2. In a large skillet, heat 2 Tbsp unsalted butter over medium heat on stovetop.
  3. Add 1/2 of 1/2″-thick medallions to skillet and sprinkle with 1/2 of salt & pepper seasoning blend.
  4. Cook for 3-4 mins then flip and cook for another 3-4 mins.
  5. Transfer medallions to a plate and keep warm. I keep my plate in the microwave while I’m cooking the 2nd batch.
  6. Repeat steps 3 – 5 for the remaining medallions.
  7. Stir in 1/3 cup heavy whipping cream and 1 Tbsp chopped fresh parsley leaves to skillet and bring to a boil, deglazing skillet as you go (fancy way of saying to scrape the stuck-on browned bits of pork from the skillet).
  8. Cook until sauce is slightly thickened.
  9. Add 3 Tbsp crumbled bleu cheese, stirring constantly until melted.
  10. Plate medallions then spoon sauce over them.
