Cooking this Pork Tenderloin in Garlic White Wine Sauce is mostly up to my husband, though I helped by drafting the recipe and I always prep the sauce ingredients.
It’s absolutely amazing! We consider making this again every week. And we eat each and every morsel!
Pork Tenderloin Medallions in Garlic White Wine Sauce Recipe
Ingredients
- 1 lb pork tenderloin, cut into 1/2″ thick medallions
- 1/3 cup dry white wine (I use Pinot Grigio or Sauvignon Blanc)
- 3 Tbsp butter, divided
- 2 Tbsp minced garlic
- 1 Tbsp extra virgin olive oil (EVOO), divided
- 1 Tbsp fresh parsley, chopped
- 1 tsp salt, divided
- 1/2 tsp pepper, divided
Directions
- Heat a large skillet over medium heat on stovetop (or set inner pot of Instant Pot to Sauté – Normal function).
- Drizzle 1/2 Tbsp EVOO into the skillet (or inner pot of Instant Pot) and heat.
- Place 1/2 of medallions into the skillet (or inner pot of Instant Pot) .
- Season top of medallions with 1/2 tsp salt and 1/8 tsp black pepper.
- Cook for 4-4.5 mins until bottom is browned.
- Flip medallions and season what is now the top side with remaining 1/4 tsp salt and remaining 1/8 tsp black pepper.
- Cook for 4-4.5 mins until what is now the bottom is browned.
- Remove medallions and set aside, keeping warm.
- Place the remaining medallions into the skillet (or inner pot of Instant Pot) and repeat steps 4 – 8.
- In the hot skillet (or inner pot of Instant Pot), melt 1 Tbsp butter.
- Add 2 Tbsp minced garlic and sauté for 30 secs (any longer will likely burn your garlic).
- Pour in 1/3 cup white wine and stir well.
- Bring sauce to a simmer and continue to cook until it has reduced by about half.
- After reducing, add the remaining 2 Tbsp of butter and stir until completely melted.
- Remove from heat.
- Plate the medallions and cover them equally with the sauce, then garnish them equally with 1 Tbsp parsley.
