Pork Tenderloin Medallions in Garlic White Wine Sauce

Cooking this Pork Tenderloin in Garlic White Wine Sauce is mostly up to my husband, though I helped by drafting the recipe and I always prep the sauce ingredients.

It’s absolutely amazing! We consider making this again every week. 😋 And we eat each and every morsel!

Pork Tenderloin Medallions in Garlic White Wine Sauce Recipe

Ingredients
  • 1 lb pork tenderloin, cut into 1/2″ thick medallions
  • 1/3 cup dry white wine (I use Pinot Grigio or Sauvignon Blanc)
  • 3 Tbsp butter, divided
  • 2 Tbsp minced garlic
  • 1 Tbsp extra virgin olive oil (EVOO), divided
  • 1 Tbsp fresh parsley, chopped
  • 1 tsp salt, divided
  • 1/2 tsp pepper, divided
Directions
  1. Heat a large skillet over medium heat on stovetop.
  2. Drizzle 1/2 Tbsp EVOO into the skillet and heat.
  3. Place 1/2 of medallions into the skillet.
  4. Season top of medallions with 1/2 tsp salt and 1/8 tsp black pepper.
  5. Cook for 4-4.5 mins until bottom is browned.
  6. Flip medallions and season what is now the top side with remaining 1/4 tsp salt and remaining 1/8 tsp black pepper.
  7. Cook for 4-4.5 mins until what is now the bottom is browned.
  8. Remove medallions and set aside, keeping warm.
  9. Place the remaining medallions into the skillet and repeat steps 4 – 8.
  10. In the hot skillet, melt 1 Tbsp butter.
  11. Add 2 Tbsp minced garlic and sauté for 30 secs (any longer will likely burn your garlic).
  12. Pour in 1/3 cup white wine and stir well.
  13. Bring sauce to a simmer and continue to cook until it has reduced by about half.
  14. After reducing, add the remaining 2 Tbsp of butter and stir until completely melted.
  15. Remove from heat.
  16. Plate the medallions and cover them equally with the sauce, then garnish them equally with 1 Tbsp parsley.
