Hubby did the actual cooking on this one. I just crafted the recipe and made up the breading dry mix. 😋

Pork Tenderloin Schnitzel Recipe

Ingredients
  • 1 lb pork tenderloin, sliced into medallions
  • 1 large egg
  • 1/2 cup (56 g) almond flour
  • 2 Tbsp extra virgin olive oil, divided
  • 1 1/2 tsp dried sage leaves (or 3/4 tsp ground sage)
  • 1/8 tsp sea salt
  • 1/16 tsp ground black pepper
Directions
  1. In a large shallow plate, beat 1 egg.
  2. In a medium bowl, whisk together 1/2 cup almond flour, 1 1/2 tsp dried sage leaves, 1/8 tsp sea salt, and 1/16 tsp ground black pepper.
  3. One by one, dip medallions into the egg mixture on both sides, lift to drain excess egg, then dip medallion in herb mixture (turning a few times to ensure it is completely covered).
  4. Heat a large skillet on stovetop on medium heat.
  5. Add 1 Tbsp extra virgin olive oil and heat.
  6. Place 1/2 of coated medallions into skillet and cook until both sides are golden. Test to ensure the meat is cooked through to the center to at least 145º F.
  7. Transfer cooked medallions to a paper towel-lined plate and keep warm. I keep mine in the microwave.
  8. Add remaining 1 Tbsp extra virgin olive oil to skillet.
  9. Place remaining 1/2 of coated medallions into skillet and cook until both sides are golden. Test to ensure the meat is cooked through to the center to at least 145º F.
  10. Transfer remaining cooked medallions to a paper towel-lined plate.
