Raspberry Jam

We love going to tea! 🫖

We’ve really enjoyed tea parties at Barbara’s Victorian Tea House for one of my Gram’s birthdays and The Huntington’s Rose Garden Tea Room for one of my husband’s birthdays – yes, at his request!

We want to be able to have our own at home for special gatherings, so I’ve started to experiment with tea related recipes.

The English SconesClotted Cream, Lemon Curd 🍋, and this Raspberry Jam are de-licious! And WAY easier that you may think!!!

Now it’s time to master tea sandwiches…

Raspberry Jam Recipe

Ingredients
  • 12 oz fresh raspberries
  • 1/3 cup sugar
  • 2 Tbsp freshly squeezed lemon juice
  • 2 Tbsp water
  • 1/4 tsp Xanthan gum
Directions
  1. Heat a medium saucepan over medium-low heat on stovetop.
  2. Add 12 oz raspberries, 1/3 cup sugar, 2 Tbsp juice, and 2 Tbsp water and cook for 12 mins, stirring often. Raspberries should break down on their own, but you can gently break up larger pieces if you want.
  3. Remove from heat and allow to cool enough to be able to work with it in strainer. It will thicken more as it cools.
  4. Remove from heat and transfer mixture to a fine mesh strainer over a medium bowl. 
  5. Using a rubber spatula, spread and press fruit mixture through strainer and into bowl, leaving mostly just seeds in strainer.
  6. Transfer bowl contents back into pan.
  7. Cook over medium-low, heat for 2 mins, stirring constantly.
  8. Sprinkle 1/4 tsp xanthan gum over the top and whisk. Do this quickly so that it doesn’t gum up your fingers!
  9. Continue to cook for 2 mins more.
  10. Store in an airtight jar in the fridge for about a week or freeze.
