I LOVED these, but hubby wasn’t a big fan of their flavor so the remaining 4 are mine – I just have to find a way to eat no more than one a day. ![]()
Raspberry Lemon Coconut Muffins Recipe

Ingredients
- 2 eggs, at room temperature
- 1 1/4 cup almond flour
- 1/2 cup frozen raspberries
- 1/2 cup Lakanto Classic (Keto-friendly granulated sugar substitute)
- 3 tbsp organic virgin cold-pressed unrefined coconut oil
- 1 Tbsp fresh lemon juice
- 1 tsp baking powder
- 1 tsp vanilla
- 1/2 tsp lemon zest
- 1/4 tsp sea salt
- 1/4 tsp xanthan gum
Directions
- Heat your oven to 375° F.
- Line a muffin pan with 6 paper or reusable muffin liners.
- Melt 3 Tbsp coconut oil, then set aside to cool slightly.
- In a medium mixing bowl, whisk together 1 1/4 cup almond flour, 1/4 tsp xanthan gum, 1 tsp baking powder, and 1/4 tsp salt.
- In a large mixing bowl, whisk 2 room temp eggs into 3 Tbsp slightly cooled coconut oil.
- Whisk into the coconut oil mixture, one at a time: 1 Tbsp lemon juice, 1 tsp vanilla extract, 1/2 tsp lemon zest, and 1/2 cup Lakanto Classic.
- Gently fold the dry mixture into the wet mixture until just combined.
- Gently fold 1/2 cup frozen raspberries into the mixture until just combined.
- Divide the batter evenly between the 6 liners.
- Bake for 30 mins, until a toothpick inserted in the center of a muffin comes out clean.
- Cool in the pan for at least 5 minutes before removing the muffins from the pan to cool on a wire rack.
