

I’ve cooked only a handful of times since we lost my mama. I’m just already at capacity most days.
But, tonite I spent time in the kitchen with this new one: Red Beans & Rice.

NOTE: Yes, I’m aware a *true* red beans recipe uses Andouille sausage, but we don’t love it. If you do love it, use up to 1 lb in place of the turkey smoked sausage.
Red Beans Recipe

Ingredients
- 2 Tbsp butter
- 1 yellow onion, chopped
- 1 green bell pepper, chopped
- 3 tsp minced garlic
- 2 Tbsp Creole seasoning (see my Creole Seasoning recipe)
- 2 (29 oz) cans dark red kidney beans (NOT drained and rinsed)
- 2 bay leaves
- 13 oz turkey smoked sausage, sliced
Directions
- Select SAUTE – HIGH on Instant Pot (IP).
- Add 2 Tbsp butter to IP’s inner pot and melt.
- Add chopped 1 yellow onion and chopped 1 green bell pepper and sauté 3 mins.
- Add 3 tsp minced garlic and 2 Tbsp Creole seasoning, then sauté 1 min.
- Add 2 (29 oz) cans dark red kidney beans (NOT drained and rinsed), and sliced 13 oz turkey smoked sausage, then stir to combine.
- Place 2 bay leaves, lightly submerged, in center of mixture.
- Seal IP’s lid and select PRESSURE COOK (or MANUAL) for 5 mins.
- When cooking cycle completes, allow a 10-min natural release (NR) then do a quick release (QR) of any remaining pressure.
- Once pressure pin drops select CANCEL and remove lid.
- Remove bay leaves.
- Select SAUTE – NORMAL, then transfer 2 cups of mixture to a blender jar and use immersion blender to blend until mostly smooth.
- Return blended mixture to inner pot and stir until well-combined.
- Continue to cook until reaches desired thickness, stirring occasionally.
- Serve over rice, if desired.
