Roasted Carrots Recipe

Ingredients
- 2 lb carrots – scrubbed and cut into sticks (we don’t peel ours)
- 2 Tbsp extra virgin olive oil
- 1/4 tsp ground black pepper
- 1/4 tsp kosher salt
Directions
- Preheat oven to 425° F.
- Line a baking sheet with parchment paper then set aside.
- In a gallon-size Ziploc bag, add sticks from 2 lbs carrots.
- In a small bowl, whisk together 2 Tbsp extra virgin olive oil, 1/4 tsp ground black pepper, and 1/4 tsp kosher salt.
- Pour marinade over carrots sticks, seal bag, and toss together until carrots are well-coated.
- Arrange seasoned carrots on prepared baking sheet in a single layer.
- Bake 23 mins, until fork-tender.
