Roasted Carrots Recipe

Ingredients
  • 2 lb carrots – scrubbed and cut into sticks (we don’t peel ours)
  • 2 Tbsp extra virgin olive oil
  • 1/4 tsp ground black pepper
  • 1/4 tsp kosher salt
Directions
  1. Preheat oven to 425° F.
  2. Line a baking sheet with parchment paper then set aside.
  3. In a gallon-size Ziploc bag, add sticks from 2 lbs carrots.
  4. In a small bowl, whisk together 2 Tbsp extra virgin olive oil, 1/4 tsp ground black pepper, and 1/4 tsp kosher salt.
  5. Pour marinade over carrots sticks, seal bag, and toss together until carrots are well-coated.
  6. Arrange seasoned carrots on prepared baking sheet in a single layer.
  7. Bake 23 mins, until fork-tender.
