Served with a Sweet Kale salad. So much yumminess.
All turned out much better than last nite’s attempt at a dish which resulted in my boys grabbing me dinner from Flame Broiler.
Roasted Carrots Recipe
Ingredients
- 2 lb carrots – scrubbed and cut into sticks (we don’t peel ours)
- 2 Tbsp extra virgin olive oil (EVOO)
- 1/4 tsp ground black pepper
- 1/4 tsp kosher salt
Directions
- Preheat oven to 425° F.
- Line a baking sheet with parchment paper then set aside.
- In a gallon-size Ziploc bag, add sticks from 2 lbs carrots.
- Add 2 Tbsp EVOO and toss together until carrots are well-coated.
- Add1/4 tsp ground black pepper and 1/4 tsp kosher salt and toss together until well distributed.
- Arrange seasoned carrots on prepared baking sheet in a single layer.
- Bake 23 mins, until fork-tender.
