We needed a change from ground beef burritos in this house and I’d long ago worked out a recipe for cilantro lime shredded chicken with salsa in the crock pot that I wanted to recreate for the Instant Pot.
This recipe was perfect for the soft tacos I wanted!!!
You can cook up to 3 lbs of chicken without changing the other quantities or times in the recipe…
This versatile recipe is savory and juicy and can give you chicken breasts (shredded or not) as a main dish on its own or be used as an ingredient in a wide variety of dishes!
Salsa Shredded Chicken Recipe
Ingredients
- 1 3/4 lbs boneless, skinless chicken breasts
- 16 oz salsa (from a jar is my preference for this recipe, but watch labels if you’re trying to keep this recipe keto-friendly)
- 1 medium lime, juiced
- 2 1/2 Tbsp taco seasoning (see my Taco Seasoning recipe)
Directions
- In a medium mixing bowl, stir together 16 oz salsa, 2 1/2 Tbsp Taco seasoning, and juice from 1 lime until well combined.
- Place 3/4 cup of salsa mixture into the Instant Pot, spreading to coat the bottom of the inner pot.
- Add 1 3/4 lbs chicken breasts. It’s okay if they overlap a bit.
- Pour remaining salsa mix over chicken, covering it as much as possible.
- Place lid on the Instant Pot and set to SEAL.
- Select PRESSURE COOK (or MANUAL) for 10 mins. If the chicken is really thick, consider increasing to 12 mins.
- When cooking has finished, allow a natural release (i.e., do nothing) for 10 mins.
- Then do a quick release of any remaining pressure by setting to VENT.
- Insert a meat thermometer into the center of the thickest part of the chicken to obtain a reading of at least 165◦ F. If it’s not there yet, continue cooking chicken breasts in increments of 2 mins (you can do a quick release after the additional mins).
- Move just the chicken to a large bowl and shred with two forks.
- Return chicken to the sauce in the Instant Pot and then serve.
