TIP: To make this recipe #Paleo, simply omit the salt.
Sautéed Zucchini & Red Onion Recipe

Ingredients
- 2 medium zucchini, sliced into thin discs
- 1 medium red onion, chopped
- 2 Tbsp extra virgin olive oil
- 1 Tbsp lemon juice
- 1 tsp minced garlic
- 1 tsp dried oregano
- 1/2 tsp ground black pepper
- 1/2 tsp kosher salt
Directions
- Heat a large skillet over medium-high heat on stovetop.
- Add 2 Tbsp extra virgin olive oil and heat.
- Add chopped 1 medium red onion and saute for 3 mins.
- Add discs from 2 medium zucchini, 1 tsp minced garlic, 1/2 tsp kosher salt, 1/2 tsp ground black pepper, and 1 tsp dried oregano and saute for 2 mins.
- Cover with a lid and cook for 2 mins.
- Remove lid, stir, and cook uncovered for 6 mins.
- Stir in 1 Tbsp lemon juice and serve immediately.
