Sautéed Zucchini & Red Onion Recipe

Ingredients
  • 2 medium zucchini, sliced into thin discs
  • 1 medium red onion, chopped
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp lemon juice
  • 1 tsp minced garlic
  • 1 tsp dried oregano
  • 1/2 tsp ground black pepper
  • 1/2 tsp kosher salt
Directions
  1. Heat a large skillet over medium-high heat on stovetop.
  2. Add 2 Tbsp extra virgin olive oil and heat.
  3. Add chopped 1 medium red onion and saute for 3 mins.
  4. Add discs from 2 medium zucchini, 1 tsp minced garlic, 1/2 tsp kosher salt, 1/2 tsp ground black pepper, and 1 tsp dried oregano and saute for 2 mins.
  5. Cover with a lid and cook for 2 mins.
  6. Remove lid, stir, and cook uncovered for 6 mins.
  7. Stir in 1 Tbsp lemon juice and serve immediately.
