

This is my favorite fish coating yet! It would work well with any light, white fish I’d think.
IMO, it’s the perfect balance of cheese vs. seasoning flavoring.
Savory Crusted Cod Recipe

Ingredients
- 3 (6 oz) cod filets
- 1 large egg
- 30 g (6 Tbsp) grated Parmesan cheese
- 1 1/2 tsp dried parsley
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/8 tsp ground black pepper
- 1/8 tsp ground coriander
- 1/8 tsp paprika
Directions
- Preheat oven to 425° F.
- Line a baking sheet with aluminum foil.
- On a plate, whisk 1 large egg.
- On a second plate, whisk together 30 g grated Parmesan, 1 1/2 tsp dried parsley, 1/2 tsp garlic powder, 1/4 tsp onion powder, 1/8 tsp ground black pepper, 1/8 tsp ground coriander, and 1/8 tsp paprika.
- Pat filets dry with paper towels.
- Dip each filet first into beaten egg, fully coating.
- Allow excess to drip off, then dip into Parmesan mixture, fully coating.
- Place evenly spaced on baking sheet.
- Bake for 10 mins, until filets reach 145° F and can be flaked with a fork.
